I want to make a fim over a year out in Dubai and it will be a mix of light and dark footage so would this film work for the Canon 518 for what I want?

I'd probably recommend Kodak Vision3 200T (Super 8) instead of the 500T you linked. The 518 won't meter the 500T correctly. Plus the 200T is a fantastic film for mixed lighting. Just throw the filter to sun for outside and to bulb when indoors and you should be just fine. You could also use 50D if you're mainly shooting outside.
