Is it hard or impossible to achieve depth of field shots (subject in focus and immidiate background blurry) on an 8mm?

It depends on how close your camera is to your subject. The closer you are, the easier you get your desired DOF effect.

Depends on the lens, film speed, focal length.

At f1.4 DOF becomes quite shallow and tricky to focus with the small viewfinders of s8 cameras.

You can use neutral density filters to force a wider f-stop for your shot, thus reducing DOF.

...and use a longer focal length lens. Be 'zoomed in', but don't have the subject too far away... and this is where focusing with an airial-image viewfinder (as found on all but a few super8 cameras) becomes critical. You must must must adjust your camera diopter acurately first, then rely on the split image (and check with a tape measure).
