subject says it all... talk about yours and why they're your faves?
personally, im a big michel gondry fan, i think he's absolutely great and really admire his work in eternal sunshine, which is how i discovered him actually.

i'll pick van sant and bergman from your list and add godard, sofia coppola, wes anderson and mike nichols. there are many others, but their films inspire me the most right now. i guess none of these come as a major surprise, with godard as the possible exception, since you've already analyzed quite well what kind of films i like to make. ;-)
EDIT: can i place a negative vote for von trier? not that i dislike him, he just gets way too much attention for very little in my opinion. especially since he hasn't made a great film since breaking the waves. a few good ones, sure, but not great.

I could write a pretty long list! 
here's a quick one:
Wong Kar Wai (Chunking Express = favorite film)
Mike Jittlov (The Wizard of Speed and Time!!! great inspiration to animators!!!! Somebody give him a huge budget for a lavish DVD special edition of his lost classic!)
Alexandro Jodorowsky
Mamoru Oshii (Especially Angel's Egg and 'Urusei Yatsura movie 2: Beautiful Dreamer' but even his more well known stuff such as Ghost in the Shell is good. It's surprising how much of his personal vision and style (and pet dog!) he puts into even his most mainstream/commercial projects... you always know when you're watching an Oshii film. This is one of the great things about the Japanese animation industry, they allow animators to make the films rather than accountants!!)

Shojin Fukui
Andrzej Zulawsky (purely on the basis of having seen only Possession so far!)
Hideki Anno (Evangelion = one of the great TV series of all time... Like 'Twin Peaks' and 'The Prisoner' it not only brilliantly parodies/deconstructs it's own genre of TV, but also totally outdoes the shows it's referencing on their own terms, and generally contains audacious ideas, content and direction that you can't believe ever got broadcast let alone became extremely popular.... and the 'End of Evangelion' movie is just astonishing... his live action stuff since he quit animation is great too tho i haven't seen much yet.)
Hayao Miyazaki
Andrei Tarkovsky (especially 'Stalker')
Jan Svankmajer (pure surrealist genius. main influence on my stop motion films)
Early George Lucas (before he was replaced by that evil cyborg version.)
Oh, and so obvious I nearly forgot!! - David Lynch!!!
