Can anyone tell me what exactly are intervalometers used for and how do they work? Much appreciated.

its just a timer for your camera.
It tells the camera to take a series of stills (1 frame) with designated duration between each frame.
For example if you want to film the sun setting, it would not be smart to burn a 2:30 minute cart to do it. Or at least it would take a lot since the sun setting takes several minutes depending where you are.
Instead you can tell your camera to shoot a still every 5 seconds, for example. Whe you watch the footage, time seems sped up.
Those footage you see in movies and music videos (Madonna's Ray of Light is the last I can remember) are just that .
