Hi Adam,
the SBM manual states a full wind drives 18 feet of film, ie 28 seconds at 24fps.
If you can wait a few days and would like to hear a sound recording of an sbm and think it might be useful, Ill make you one, with a spoken voice as reference level.

I count myself as one of those Leicina Special owners 'who think the R10 is a better camera' to quote another forum member.

Great looking opportunity with kit of that quality, but what made you discount the idea of engineering an alternative lens mount (or waiting for RED to do the same) and then choosing from the multitude of fantastic glass already produced specifically for this type of (ie reproduction) work?

sounds like a neat project. Good luck with it. Buy yourself a single cart of a filmstock that the Nautica can handle and is also capable of being home processed easily (eg Tri-x), get yourself o-rings and grease and your wetsuit on and go AND TEST! Even if that is only paddling around ...
